Ingredients (serves 4):

  • 1 cup short-grain rice (such as Arborio or sushi rice)
  • 4 cups whole milk (you can also use a combination of milk and cream for extra richness)
  • 1/2 cup sugar
  • 1 tsp vanilla extract
  • 1/2 tsp ground cinnamon (optional)
  • A pinch of salt
  • 1/4 cup raisins (optional)
  • Ground cinnamon or nutmeg for garnish (optional)

Instructions:

  1. Rinse the rice under cold water until the water runs clear. This helps remove excess starch and prevents the pudding from becoming too sticky.
  2. In a large saucepan, combine the rice, milk, sugar, and salt. Bring to a gentle boil over medium heat, stirring frequently to prevent the rice from sticking to the bottom of the pan.
  3. Reduce the heat to low and let the mixture simmer, stirring occasionally, until the rice is tender and the mixture has thickened, about 25-30 minutes. Make sure to stir often to avoid burning the milk.
  4. Stir in the vanilla extract, and if using, the ground cinnamon and raisins. Let the pudding cook for an additional 5 minutes, stirring frequently to ensure everything is well combined.
  5. Remove the saucepan from the heat and let the pudding cool slightly. It will continue to thicken as it cools. If you prefer a thinner consistency, you can stir in a little more milk.
  6. Serve the rice pudding warm or chilled, garnished with a sprinkle of ground cinnamon or nutmeg, if desired. You can also top it with fresh fruit, a dollop of whipped cream, or a drizzle of caramel sauce for added flavor.
