Homemade Pasta

One of the most wonderful dishes we can make from wheat is pasta. And homemade pasta tastes even better. Here's a simple recipe that doesn’t require a pasta machine.


Ingredients (serves 4):

  • 2 cups flour
  • 1/4 tsp fine sea salt
  • 3 eggs
  • 2 tbsp milk
  • 1 1/2 tbsp olive oil

Instructions:

  1. Combine the flour and salt and place them on a clean, flat work surface. Make a well in the center.
  2. Whisk together the eggs, milk, and olive oil in a separate bowl. Pour the mixture into the well in the flour.
  3. Using your hands, mix the ingredients and knead the dough for about 5 minutes until it becomes smooth and elastic. Shape the dough into a ball and wrap it in a clean kitchen towel. Let it rest for 20 minutes.
  4. After the dough has rested, use a rolling pin to roll it out very thinly, about 1/8 inch (3 mm) thick. Allow it to firm up for a few minutes, then loosely drape it over the rolling pin. Remove the rolling pin, leaving you with a gently folded sheet of dough.
  5. Using a sharp knife, cut the dough into thin strips, about 1/2 inch (1 cm) wide for standard noodles. For spaghetti, cut them thinner; for fettuccine or pappardelle, cut them wider. Carefully unroll the strips.
  6. Cook the pasta in boiling salted water for 4 minutes for al dente texture. Serve with your favorite sauce, a delicious pesto, or simply with some butter and Parmesan cheese.
