Stuffed Mini Peppers

Not only are these stuffed mini bell peppers quick & effortless, they are also bursting with flavor! Filled with a smooth blend of Greek yogurt, crumbled feta, and fresh herbs, they offer the perfect balance of richness and freshness without weighing you down. No baking required—just mix, fill, and serve for an easy, colorful appetizer that’ll stand out on your game-day spread!

Ingredients (for 6-8 servings):

  • 12 mini bell peppers, halved and deseeded
  • ½ cup Greek yogurt
  • ½ cup crumbled feta cheese
  • 1 tbsp olive oil
  • 1 tsp lemon juice
  • ½ tsp garlic powder
  • ½ tsp dried oregano
  • ¼ tsp black pepper
  • 2 tbsp chopped fresh parsley (plus extra for garnish)

Instructions:

  1. Slice mini bell peppers in half lengthwise and remove any seeds. Set aside.
  2. In a bowl, mix Greek yogurt, crumbled feta, olive oil, lemon juice, garlic powder, oregano, black pepper, and chopped parsley until well combined.
  3. Spoon the mixture into each bell pepper half, pressing down slightly to hold its shape.
  4. Sprinkle with extra parsley and serve immediately, or chill for up to 2 hours before serving for a refreshing, make-ahead option.

Ingredients

Dough:

  • 2 cups flour
  • 1 cup olive oil
  • 2 tbsp sugar
  • 2 tsp salt
  • 1/4 cup milk
  • Water

 Filling:

  • 1 onion, diced
  • 1 lb ground beef
  • A pinch of salt
  • 1/2 cup water
  • 1 cup tomato sauce

 Method

  1. Mix flour, sugar, salt, milk, and water in a pan, and mix until you form a dough.
  2. In a saucepan, heat a splash of olive oil and add the onion. Cook on medium-high until onion has softened.  
  3. Add the ground beef, and add the salt, water, and tomato sauce. When the meat has browned, remove from heat. 
  4. Dust a flat surface with flour, and roll out the dough into a flat sheet. 
  5. Use a ramekin or cup to cut out circles. 
  6. Add a dollop of beef-tomato mixture to the center of each circle. 
  7. Pinch the dough into a little pocket.
  8. Bake in the oven at 350° F for 15 minutes.
  9. Enjoy!
