Salad with Napa Cabbage and Peanut Dressing

This delicious salad with chicken breast and fresh Napa cabbage is perfect for Spring. It's packed with vitamins and proteins, and tastes fresh and light.

 

Ingredients (serves 4)

  • 14 oz chicken breast
  • 6 tbsp sesame oil
  • 3 tbsp honey
  • 1 lb Napa cabbage
  • 1 red bell pepper
  • 4 green onions
  • 1 1/2 cups carrots
  • 1 garlic clove
  • 2 tbsp fresh ginger (about a 1-inch piece)
  • 3 tbsp soy sauce
  • 5 tbsp lemon juice
  • 2 tbsp sesame seeds
  • Salt, pepper, and curry powder to taste

Instructions

  1. Clean the chicken breast, cut it into strips, and marinate with 2 tbsp sesame oil, 1 tbsp honey, and curry powder.
  2. Clean the Napa cabbage and cut it into very thin strips. Wash the bell pepper and cut into thin strips. Clean the green onions and slice into rings. Peel and coarsely grate the carrots. Mix all the vegetables, reserving some of the green onion tops.
  3. Peel and coarsely chop the garlic clove and ginger, then lightly sauté. Deglaze with soy sauce, 2 tbsp honey, lemon juice, and 4 tbsp water. Add the remaining sesame oil and briefly blend.
  4. Pour the dressing over the vegetables, mix well, and let sit for 20 minutes. Coarsely chop the peanuts. In the meantime, fry the chicken breast.
  5. Serve the salad sprinkled with sesame seeds and the reserved green onion tops.
