Spaghetti alla Puttanesca

Another classic of Italian cuisine that is quick to prepare and tastes wonderfully fresh. The combination of olives and anchovies transports you straight to the Mediterranean.

 

Ingredients (serves 4)

  • 1 onion
  • 2 cloves garlic
  • 1 small chili pepper
  • 6 anchovy fillets
  • 1 3/4 cups diced tomatoes
  • 1 tbsp finely chopped oregano or 1/4 tsp dried oregano
  • 1/2 cup black olives
  • 1 tbsp capers
  • 2/3 lb spaghetti

Instructions

  1. Heat the olive oil in a large pot. Sauté the onion, garlic, and chili pepper over low heat for about 6 minutes until the onion is translucent. Add the anchovies and stir well.
  2. Add the tomatoes, oregano, olives, and capers. Bring to a boil. Reduce the heat, season, and let it simmer.
  3. Meanwhile, cook the pasta in a large pot of boiling salted water until al dente and serve with the sauce.
