Another classic of Italian cuisine that is quick to prepare and tastes wonderfully fresh. The combination of olives and anchovies transports you straight to the Mediterranean.
Ingredients (serves 4)
1 onion
2 cloves garlic
1 small chili pepper
6 anchovy fillets
1 3/4 cups diced tomatoes
1 tbsp finely chopped oregano or 1/4 tsp dried oregano
1/2 cup black olives
1 tbsp capers
2/3 lb spaghetti
Instructions
Heat the olive oil in a large pot. Sauté the onion, garlic, and chili pepper over low heat for about 6 minutes until the onion is translucent. Add the anchovies and stir well.
Add the tomatoes, oregano, olives, and capers. Bring to a boil. Reduce the heat, season, and let it simmer.
Meanwhile, cook the pasta in a large pot of boiling salted water until al dente and serve with the sauce.
