Carrot Fritters

Golden and crispy, these spiced carrot fritters are a flavorful way to enjoy carrots in a whole new way. Shredded carrots are combined with chickpea flour, warm spices, and fresh herbs, and then pan-fried to perfection. They are packed with flavor and make a perfect appetizer, side, or light meal. Enjoy them fresh from the pan for the best texture! Serve them with a cooling yogurt dip or a squeeze of lemon for a delicious snack or side dish. 

Ingredients (for about 10 fritters):

  • 2 cup shredded carrots
  • ½ cup chickpea flour
  • 2 tbsp chopped cilantro
  • 1 tsp cumin
  • ½ tsp ground coriander
  • ½ tsp smoked paprika
  • ½ tsp turmeric
  • ½ tsp salt
  • ¼ tsp black pepper
  • 1 small garlic clove, minced
  • ¼ cup water (as needed)
  • 2 tbsp olive oil (for frying)

Instructions:

  1. In a large bowl, mix shredded carrots, chickpea flour, cilantro, spices, and garlic. Gradually add water until a thick batter forms.
  2. Heat olive oil in a skillet over medium heat. Drop spoonfuls of batter into the pan, flattening slightly.
  3. Cook for 2-3 min. per side, or until golden and crisp.
  4. Drain on paper towels and serve warm with yogurt dip or lemon wedges.
