Carrot Fritters
Golden and crispy, these spiced carrot fritters are a flavorful way to enjoy carrots in a whole new way. Shredded carrots are combined with chickpea flour, warm spices, and fresh herbs, and then pan-fried to perfection. They are packed with flavor and make a perfect appetizer, side, or light meal. Enjoy them fresh from the pan for the best texture! Serve them with a cooling yogurt dip or a squeeze of lemon for a delicious snack or side dish.
Ingredients (for about 10 fritters):
- 2 cup shredded carrots
- ½ cup chickpea flour
- 2 tbsp chopped cilantro
- 1 tsp cumin
- ½ tsp ground coriander
- ½ tsp smoked paprika
- ½ tsp turmeric
- ½ tsp salt
- ¼ tsp black pepper
- 1 small garlic clove, minced
- ¼ cup water (as needed)
- 2 tbsp olive oil (for frying)
Instructions:
- In a large bowl, mix shredded carrots, chickpea flour, cilantro, spices, and garlic. Gradually add water until a thick batter forms.
- Heat olive oil in a skillet over medium heat. Drop spoonfuls of batter into the pan, flattening slightly.
- Cook for 2-3 min. per side, or until golden and crisp.
- Drain on paper towels and serve warm with yogurt dip or lemon wedges.
