Hearty and full of warm spices, this carrot and lentil dal is a comforting dish that’s both nutritious and satisfying.
Ingredients (for 4 servings):
1 cup red lentils, rinsed
2 large carrots, peeled and chopped
1 small onion, finely chopped
2 cloves garlic, minced
1-inch piece ginger, grated
1 tsp cumin seeds
1 tsp ground turmeric
½ tsp ground coriander
½ tsp garam masala
½ tsp red pepper flakes (optional)
3 cups vegetable broth
1 cup coconut milk (optional, for creaminess)
1 tbsp lemon juice
2 tbsp olive oil or ghee
Salt to taste
Fresh cilantro and chili flakes for garnish
Instructions:
In a saucepan, heat 1 tbsp oil or ghee over medium heat. Add cumin seeds and toast for 30 seconds until fragrant.
Add onion, garlic, and ginger, and sauté until soft, about 3-4 min.
Stir in turmeric, coriander, garam masala, and red pepper flakes. Cook for 1 min.
Add carrots, lentils, and broth. Bring to a boil, then reduce heat and simmer for 20-25 min. until carrots and lentils are tender.
Blend half of the dal with an immersion blender or mash with a fork for a creamy texture. Stir in coconut milk (if using) and lemon juice. Adjust seasoning.
Drizzle with remaining olive oil or ghee, garnish with fresh cilantro and chili flakes, and serve warm with rice or flatbread.
