Stuffed Peppers

For a healthy and colorful meal, there's nothing better than these delicious bell peppers filled with a mixture of meat and rice. Quick to make and a real eye-catcher.


Ingredients (serve 4)

  • 4 large red bell peppers
  • 2/3 lb ground beef
  • 1/2 cup diced ham
  • 1 cups cooked rice
  • 1 3/4 cups crushed tomatoes
  • 3 garlic cloves
  • 1 onion
  • Rosemary
  • Parsley
  • Salt
  • Sugar
  • Oil

Instructions

  1. Finely chop the onion and garlic cloves.
  2. Sauté both ingredients in a large pan with oil over medium-high heat.
  3. When the onion begins to brown, add the diced ham and stir. After a few minutes, add the ground beef and stir to cook it thoroughly.
  4. When the meat is done, add the tomatoes and stir. Sprinkle with rosemary, parsley, and salt. Taste the mixture, and if it's too acidic, add a teaspoon of sugar.
  5. Once the sauce tastes good, add the rice and stir to combine everything.
  6. Add one cup of water and stir, allowing the rice to absorb the water. When it is almost dry, remove from the heat.
  7. Wash the bell peppers, cut off the tops, and clean out the insides.
  8. Fill each bell pepper with the rice mixture and place the tops back on.
  9. Wrap each bell pepper in aluminum foil. Preheat the oven to 350°F and place the wrapped peppers in the oven. Bake for one and a half hours.
  10. Remove and check if the rice is done (if not, wait a few more minutes). Serve hot.
