Spinach Puff Pastry Roll

This spinach puff pastry roll is quick to prepare and will delight the whole family. Our recipe is completely vegetarian. For those who prefer meat, you can also fry some bacon with the spinach and add it.


Ingredients (serves 4)

  • 1 onion
  • 2 garlic cloves
  • 14 oz frozen spinach, thawed and drained
  • 1 1/2 cups crumbled feta cheese
  • 1 roll puff pastry (from the refrigerated section)
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 350°F.
  2. Peel and finely chop the onion and garlic cloves. Wash and drain the spinach (or thaw if using frozen spinach).
  3. Heat oil in a pan and sauté the onion and garlic for about 3 minutes. Then reduce the heat slightly, add the spinach, season with salt, and cook with the lid on for about 10 minutes.
  4. Take the feta cheese out of the package, drain it, and then crumble it.
  5. Roll out the puff pastry, spread the spinach mixture and feta cheese on top. Carefully roll it up along the long side. Quickly seal the pastry and place it on a baking sheet lined with parchment paper. Bake for about 20 minutes, until the pastry is lightly browned.
