Healthy doesn't have to be bland! A touch of feta cheese makes a difference in these protein-rich omelette muffins. These delicious muffins are a perfect dinner that can be easily prepared. And of course, you can add other favorite ingredients.
Ingredients (for 12 muffins)
6 eggs
1 cup chopped baby spinach
1/2 cup diced green and/or red bell pepper
8 quartered cherry tomatoes
1/2 cup finely diced shallots
1/2 cup crumbled feta cheese
Salt and pepper to taste
Instructions
Preheat the oven to 350°F.
Grease the muffin tins, even if they are non-stick.
Beat the eggs with salt and pepper. Mix in the vegetables and feta cheese.
Divide the mixture evenly among the muffin tins.
Bake for 20 minutes, until the tops are lightly golden brown and the centers spring back when touched.
