Something special yet simple to prepare: This fried rice with shrimp can also be made with leftover rice from the previous day, which simplifies the dish even further.
Ingredients (serves 4)
2 cups rice
3 cups shrimp (ready to cook)
1 onion
2 cloves garlic
1 carrot
1 bunch green onions
2 eggs
2 tbsp soy sauce
Fresh cilantro or parsley (optional)
Salt and pepper to taste
Instructions
Cook the rice according to the package instructions and let it cool. Cold rice is easier to fry.
Heat oil in a large pan or wok over medium-high heat.
Add the shrimp and cook for about 2-3 minutes per side until they are pink and cooked through. Season with salt and pepper. Remove the shrimp from the pan and set aside.
Peel and finely chop the onion and garlic. Sauté the onion and garlic until soft and fragrant (about 2 minutes). Wash and dice the carrot and add it to the pan.
Push the vegetables to one side of the pan and add the eggs to the empty space. Scramble them quickly until fully set.
Add the rice to the pan and mix everything well. Season the mixture with soy sauce and stir thoroughly. Let the rice fry for 3-4 minutes until it becomes slightly crispy.
Add the cooked shrimp and green onions to the pan and mix everything well to evenly distribute the ingredients.
Taste the rice and season with salt, pepper, or a bit more soy sauce, if desired.
Garnish with fresh cilantro or parsley and serve.
Tip: You can also add extra vegetables like peas, broccoli, or corn to make the dish even more colorful and healthy.
