A delicious Italian specialty that's easy to prepare. The better the ingredients, the better the result. Fresh baguette and fragrant tomatoes are essential for that taste of Italian sunshine.
Ingredients (serve 4)
2 shallots
3-4 tomatoes
2 garlic cloves
4 tbsp olive oil
1 baguette
Fresh basil leaves for garnish
Salt, pepper, sugar, and herbes de Provence to taste
Instructions
Finely chop the shallots and sauté them in a small pan with a bit of sugar and olive oil.
Dice the tomatoes very finely and add them to the shallots along with one pressed garlic clove. Let everything simmer briefly with olive oil and seasonings.
Slice the baguette diagonally. Heat olive oil with the second pressed garlic clove in a large pan over medium heat. Fry each side of the baguette slices until golden brown.
Place the baguette slices on a large plate and top each slice with the tomato mixture. Sprinkle with salt and pepper.
Garnish each slice with a basil leaf and you're done!
