Gnocchi are often overlooked in favor of other pasta, but this Gnocchi Casserole is a real hit. The tomato-cream sauce with basil brings Italy right into this dish. Plus, it requires little preparation and can be enjoyed quickly.
Ingredients (serve 4)
1 lb gnocchi
1 tomato
1 onion
2 cups shredded mozzarella
1 can crushed tomatoes
3/4 cup heavy cream
1 handful basil
1 cup grated cheese
Salt and pepper to taste
Instructions
Preheat the oven to 400°F.
Place the gnocchi, diced tomato, onion, and 1 cup of shredded mozzarella in a baking dish.
Mix the crushed tomatoes with the heavy cream in a bowl and season with salt, pepper, and chopped basil. Pour the sauce over the gnocchi and distribute everything evenly in the baking dish.
Sprinkle the remaining 1 cup of shredded mozzarella on top of the casserole, then sprinkle with grated cheese.
Bake the casserole in the oven for 30 minutes. Serve with fresh basil.
