Berry Peach Cobbler
This twist on a classic peach cobbler brings together juicy blackberries, raspberries, and ripe peaches beneath a golden, biscuit-like topping. Ingredients (for 6-8 servings):
For the Filling:
- 3 ripe peaches, sliced
- 1 cup blackberries
- 1 cup raspberries
- ? cup sugar
- 1 tbsp cornstarch
- 1 tsp lemon juice
- ½ tsp cinnamon
For the Topping:
- 1 cup flour
- ¼ cup sugar
- 1 tsp baking powder
- ½ tsp salt
- ½ tsp cinnamon
- 6 tbsp cold butter, cubed
- ? cup milk
- 1 tsp vanilla extract
Instructions:
- Preheat oven to 375°F. Lightly grease a baking dish.
- In a large bowl, toss peaches, blackberries, raspberries, sugar, cornstarch, lemon juice, and cinnamon. Pour into the prepared dish.
- In another bowl, whisk flour, sugar, baking powder, salt, and cinnamon. Cut in butter with a fork or pastry cutter until crumbly. Stir in milk and vanilla until a soft dough forms.
- Drop spoonfuls of dough over the fruit mixture, spreading slightly.
- Bake for 35-40 min., until the topping is golden and the fruit is bubbling.
- Let cool slightly before serving.
