These creamy, zesty bites are a summertime tradition at potlucks and family gatherings. The yolks are whipped with mustard, mayo, and a dash of vinegar to create a smooth filling that’s piped or spooned back into egg whites. A sprinkle of paprika on top is a must for that signature retro touch.
Ingredients (for 6 servings):
6 large eggs
1/4 cup mayonnaise
1 tsp yellow mustard
1 tsp white vinegar
Salt and pepper, to taste
Paprika, for garnish
Instructions:
Hard-boil eggs, cool, peel, and slice in half.
Remove yolks and mash with mayo, mustard, vinegar, salt, and pepper.
Spoon or pipe filling into egg whites. Sprinkle with paprika.
