Classic and comforting, this pie highlights summer's blueberry bounty beneath a golden, flaky lattice crust. The blueberries burst with flavor and create a naturally sweet and jammy filling. The lattice top not only looks stunning but also allows steam to escape, ensuring a perfectly set pie. Serve it warm or chilled for a traditional treat that never goes out of style.
Ingredients (for 8 servings):
2 pie crusts
5 cups fresh blueberries
2/3 cup sugar
3 tbsp cornstarch
1 tbsp lemon juice
1/2 tsp cinnamon
1 tbsp butter (for dotting)
Instructions:
Preheat oven to 400°F. Roll out one crust and fit into pie dish.
Toss blueberries with sugar, cornstarch, lemon juice, and cinnamon. Pour into crust.
Dot with butter. Cut second crust into strips and weave into a lattice on top.
Bake for 45-55 minutes, covering edges if they brown too quickly. Cool before slicing.
