Ingredients (for 6–8 servings):

  • 2 tbsp olive oil
  • 1 onion, diced
  • 2 carrots, diced
  • 2 garlic cloves, minced
  • 1 cup frozen peas
  • 1 ½ cups cooked lentils (green or brown)
  • 2 tbsp tomato paste
  • 1 cup vegetable broth
  • 1 tsp thyme
  • 1 tsp rosemary
  • Salt and pepper, to taste
  • 4 cups mashed potatoes (prepared ahead with plant-based butter and milk)

Instructions:

  1. Preheat the oven to 375°F.
  2. Heat the olive oil in a large skillet, then sauté onion, carrots, and garlic until softened, about 5 min.
  3. Stir in the lentils, tomato paste, vegetable broth, thyme, and rosemary. Simmer until thickened, about 10 min. Add the peas and season with salt and pepper.
  4. Spread the lentil mixture into a greased casserole dish. Top evenly with mashed potatoes.
  5. Bake for 25–30 min., until the top is lightly golden. Let cool slightly before serving.
