Ingredients (for 4 servings):

  • 12 oz rice noodles
  • 1/3 c peanut butter
  • 3 tbsp soy sauce
  • 2 tbsp lime juice
  • 1 tbsp maple syrup
  • 1 tsp sriracha
  • 1 garlic clove, minced
  • 1/2 c warm water
  • 1 c shredded carrots
  • 1 c cucumber, thinly sliced or julienned
  • 1 c bean sprouts
  • Chopped peanuts & cilantro, for garnish

Instructions:

  1. Cook the rice noodles according to package directions, then drain and rinse under cold water.
