Ingredients (for 4 wraps):

  • 2 medium sweet potatoes, diced
  • 1 red onion, thinly sliced
  • 2 c kale, chopped
  • 2 tbsp olive oil
  • 1 tsp smoked paprika
  • Salt & pepper, to taste
  • 4 large tortillas or wraps
  • Optional: hummus, tahini, or avocado spread

Instructions:

  1. Preheat the oven to 400°F and toss sweet potatoes and red onion with olive oil, smoked paprika, salt, and pepper. Roast 20–25 min., until tender and lightly caramelized.
  2. Add the kale to the pan for the last 5 min. of roasting to soften.
  3. Warm the tortillas and spread with hummus, tahini, or avocado if using.
  4. Fill each wrap with roasted vegetables, then roll tightly and slice in half.
