These soft, chewy caramels capture the warm flavors of fall and Halloween in every bite. Made with real apple cider and coconut milk, they’re dairy-free and delicious.
Ingredients (for 24 caramels):
1 cup apple cider
1/2 cup coconut milk
1/2 cup maple syrup
1/2 tsp cinnamon
Pinch of sea salt
Instructions:
Bring apple cider to a boil in a saucepan and reduce to 1/4 cup.
Add coconut milk, maple syrup, cinnamon, and salt. Simmer over medium heat, stirring often.
Cook until mixture reaches soft ball stage (about 240°F).
Pour into a lined loaf pan and cool completely before cutting into squares.
