Ingredients (for 2 servings):
1 pint cherry tomatoes
4 oz block feta cheese
2 tbsp olive oil
2 cloves garlic, minced
6 oz pasta (penne or rotini)
Fresh basil, salt, and pepper
Instructions:
Preheat oven to 400°F. Place feta and tomatoes in a baking dish; drizzle with oil and season.
Roast for 25–30 minutes, until tomatoes burst.
Meanwhile, cook pasta and reserve ¼ cup water.
Stir garlic into hot dish, mix in cooked pasta, and add basil. Loosen with pasta water as needed.
