These stuffed bell peppers are a comforting and satisfying meal that looks as good as it tastes. Each pepper is packed with a savory mixture of seasoned ground beef, rice, tomatoes, and cheese, then baked until tender and bubbling. They’re perfect for meal prep or a cozy family dinner, offering a complete meal in one edible bowl.

Ingredients (for 4 servings):

  • 4 large bell peppers (any color), tops cut off and seeds removed
  • 1 lb ground beef
  • 1 cup cooked rice
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 cup canned diced tomatoes
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tsp Italian seasoning
  • 1 cup shredded mozzarella or cheddar cheese, divided
  • 1 tbsp olive oil

Instructions:

  1. Preheat oven to 375°F. Lightly drizzle olive oil inside a baking dish and arrange the hollowed bell peppers upright.
  2. In a large skillet over medium heat, cook ground beef until browned, about 6–7 min. Drain excess fat.
  3. Add diced onion and garlic to the skillet and sauté until softened, about 2–3 min. Stir in cooked rice, diced tomatoes, salt, pepper, and Italian seasoning. Mix until combined and heated through.
  4. Stir in half the shredded cheese and remove from heat.
