Taco night meets pasta night in this bold and cheesy fusion dish. With ground beef, taco seasoning, and rotini pasta all cooked in one pot, cleanup is a breeze. It’s a kid-approved favorite that’s easy to double for leftovers.

Ingredients (for 4 servings):

  • 1 lb ground beef
  • 1 tbsp taco seasoning
  • 2 cups uncooked rotini
  • 1¾ cups water
  • 1 cup salsa
  • 1 cup shredded Mexican cheese blend
  • Sour cream and green onions, for topping

Instructions:

  1. Brown the beef in a skillet and drain the excess fat. Stir in the taco seasoning.
  2. Add the pasta, water, and salsa. Bring to a boil, reduce the heat, and cover.
  3. Cook for 12–14 min., stirring occasionally, until the pasta is tender.
  4. Stir in the cheese and serve with toppings.
