Pan-seared gnocchi creates a crispy base for this quick vegetarian dinner. Mushrooms bring an earthy richness while spinach adds freshness and color. A final sprinkle of Parmesan ties it all together. Try adding cooked bacon for extra flavor and protein!

Ingredients (for 4 servings):

  • 1 package (16 oz) potato gnocchi
  • 2 cups mushrooms, sliced
  • 2 cloves garlic, minced
  • 1/4 cup grated Parmesan
  • Salt and pepper, to taste
  • 2 tbsp olive oil

Instructions:

  1. Heat 1 tbsp olive oil in a large skillet. Add gnocchi and cook until golden and crispy, 6–8 min. Remove and set aside.
  2. In the same skillet, add remaining oil and cook mushrooms 4–5 min.
  3. Stir in garlic and return gnocchi to the pan, toss everything together, and sprinkle with Parmesan.
