Ingredients (for 4 servings):
1 package (16 oz) potato gnocchi
2 cups mushrooms, sliced
2 cloves garlic, minced
1/4 cup grated Parmesan
Salt and pepper, to taste
2 tbsp olive oil
Instructions:
Heat 1 tbsp olive oil in a large skillet. Add gnocchi and cook until golden and crispy, 6–8 min. Remove and set aside.
In the same skillet, add remaining oil and cook mushrooms 4–5 min.
Stir in garlic and return gnocchi to the pan, toss everything together, and sprinkle with Parmesan.
