Ingredients (for 4 servings):

  • 1 cup long-grain white rice
  • 2 cups broccoli florets
  • 2 1/2 cups chicken broth
  • 1 cup shredded cheddar cheese
  • 1/4 cup milk
  • Salt and pepper, to taste
  • 1 tbsp butter

Instructions:

  1. In a large skillet, combine rice, broccoli, and broth. Bring to a boil, then cover and simmer 15 min.
  2. Remove lid and stir in butter, milk, cheese, salt, and pepper.
  3. Continue to cook 2–3 min. until creamy.
  4. Serve warm.
