Ingredients (for 6–8 servings):
For the turkey:
4–5 lb boneless turkey breast
1 onion, sliced
1 tbsp olive oil
1 tsp garlic powder
1 tsp dried thyme
Salt and pepper, to taste
½ cup chicken broth
For the gravy:
2 tbsp butter
2 tbsp flour
1 cup cooking liquid from the turkey
Instructions:
Rub turkey with olive oil and seasonings.
Place onion slices in bottom of slow cooker, then set turkey on top.
Add broth, cover, and cook on LOW for 6–7 hours or until internal temp reaches 165°F.
Remove turkey and let rest. To make gravy, melt butter in a pan, whisk in flour, then slowly add 1 cup of turkey drippings. Simmer until thickened.
