Delicate and spicy, these thin ginger cookies are crisp, aromatic, and traditionally cut into hearts or stars. They’re perfect for hanging on the tree—or serving alongside a mug of glögg.
Ingredients (makes about 4 dozen):
3/4 cup unsalted butter
3/4 cup sugar
1/2 cup molasses
1 egg
3 cups flour
1 tsp cinnamon
1 tsp ginger
1/2 tsp cloves
1 tsp baking soda
Instructions:
Cream butter and sugar. Add molasses and egg.
Mix in dry ingredients. Chill dough for at least 2 hours.
Roll very thin, cut into shapes, and bake at 375°F for 6–8 minutes.
