The dates naturally sweeten and thicken the pudding base, while blended bananas and a splash of vanilla create that signature flavor. Ingredients (for 4 servings):
1/2 cup pitted Medjool dates
2 ripe bananas
1 cup almond milk (or milk of choice)
1 tbsp cornstarch
1 tsp vanilla extract
Optional toppings: crushed graham crackers, coconut cream, banana slices
Instructions:
Soak dates in warm water for 10 minutes if dry, then drain.
In a blender, combine dates, bananas, and 3/4 cup of the milk. Blend until smooth.
In a saucepan, whisk remaining 1/4 cup milk with cornstarch until dissolved.
Add blended mixture and cook over medium heat, stirring until thickened (5–7 minutes).
Stir in vanilla extract, remove from heat.
Cool slightly, then chill for at least 1 hour before serving.
