These rich, chocolatey brownies get their sweetness from dates and their decadence from a bit of dark chocolate. The texture is fudgy and satisfying, while still being gluten-free and refined sugar-free. Enjoy them warm or straight from the fridge.

Ingredients (for 9 brownies):

  • 1 cup pitted dates, soaked in hot water for 10 minutes
  • 1/2 cup almond butter
  • 2 eggs
  • 1/3 cup cocoa powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/4 cup dark chocolate chips (optional)

Instructions:

  1. Preheat oven to 350°F and line an 8x8-inch pan with parchment.
  2. Blend soaked dates with almond butter and eggs until smooth.
  3. Add cocoa powder, baking soda, and salt. Blend again.
  4. Fold in chocolate chips if using.
  5. Pour into pan and smooth top.
  6. Bake for 20–25 minutes. Cool completely before slicing.
