Ingredients (for 10–12 macaroons):

  • 1 cup pitted dates
  • 1 1/4 cups unsweetened shredded coconut
  • 1 tbsp coconut oil
  • 1/2 tsp vanilla extract
  • Optional: melted dark chocolate for dipping

Instructions:

  1. Blend dates, coconut, oil, and vanilla in a food processor until sticky and well mixed.
  2. Scoop and press into small mounds or balls.
