Ingredients (for 10–12 macaroons):
1 cup pitted dates
1 1/4 cups unsweetened shredded coconut
1 tbsp coconut oil
1/2 tsp vanilla extract
Optional: melted dark chocolate for dipping
Instructions:
Blend dates, coconut, oil, and vanilla in a food processor until sticky and well mixed.
Scoop and press into small mounds or balls.
Chill for 30 minutes to set.
Optional: Dip the bottoms in melted chocolate and chill again.
