Spiced roast chicken

This recipe is a culinary specialty from the Calcutta Jews of Bengal, India. To make, prepare the marinade by heating some honey with orange juice, mustard, salt and spices, such as cardamom, turmeric, ginger and cloves. Bring to a boil and let simmer for a few minutes. Let the chicken marinate in the mixture overnight. The next day, cook finely chopped onions, celery and carrots in a saute pan until lightly browned. Place the chicken in a roasting pan, and pour the marinade over it once again. Add the vegetables to the pan, and bake for 1 hour at 350 °F. Moisten the chicken every 15 minutes with water so it doesn't dry out. Serve hot with the caramelized vegetables and the cooking juice.
