This distinctive braided brioche is formed into a round shape for the New Year to symbolize the continuity of life and another yearly "cycle" passed. Start preparing the enriched yeast dough by combining 2 teaspoons dry baker's yeast with 1 tablespoon sugar, a bit of water and flour. Leave in a warm place for about 10 minutes until the yeast is dissolved. Next, add 1 tablespoon sugar, salt, 7 tablespoons oil and 3 whole eggs. Mix well, then gradually stir in 5 cups all-purpose flour. Knead well, and shape into a ball. Place the dough in a warm place, cover and let rest overnight. The next day, knead the dough once more, and shape it into a circle. Let rest 1 hour until the dough doubles in volume. Brush with beaten egg, and sprinkle with sesame seeds. Bake in a preheated oven at 350 °F for 40 minutes.
