Potatoes

Tubers and root vegetables can be tricky to manage, as they appear to last forever, then suddenly sprout and look like they are trying to grow a family in your vegetable tray! To extend their lifespan, store potatoes in a dark, cool environment away from direct sunlight. Potatoes go with everything, so if your spuds are nearing the end of their lifetime, mash them, roast them, fry them or turn them into a salad. Potatoes and root vegetables do not freeze particularly well on their own, but they'll freeze great in a liquid stew or soup.
