Valentine’s Day rarely falls conveniently on the weekend, and even the best of bosses is not likely to let you take the afternoon off work to prepare a romantic feast for your boo.

If you’re lucky, you’ll have a few hours to prepare, but if you’re going to be a bit shorter on time, you’ll need to make sure you pick out recipes that you can either make ahead of time or whip up within your time constraints.

There’s nothing romantic about waiting around with a rumbling stomach until 11:00 at night.

These quick and easy chicken quesadillas are the perfect, last-minute family dinner!

INGREDIENTS:

  • 2 chicken breasts
  • 1/2 cup of tomato sauce
  • 1/2 cup of chives, chopped
  • 1 tsp. of Mexican spice mix
  • 4 Tortillas
  • Cheddar
  • Salt, to taste

METHOD:

  1. Put shredded chicken breast, tomato sauce, chives, and mexican spice mix in a bowl and mix together.
  2. Lay out the tortillas. Place a slice of cheddar in the center, and cover with the chicken mix.
  3. Fold up tortillas, and heat in a frying pan until golden.
  4. Enjoy!
