It's easy to pick one of these up from the grocery store, but it's not much more complicated to make one fresh in your own home. All you need to do is add some spices to a whole chicken or chicken pieces and throw it in the oven or slow cooker! Not only do you have the satisfaction of doing it yourself (and the delicious aroma floating about your kitchen while it's cooking), but you'll probably find it tastes even better than the lazy version at Walmart.

These quick and easy chicken quesadillas are the perfect, last-minute family dinner!

INGREDIENTS:

  • 2 chicken breasts
  • 1/2 cup of tomato sauce
  • 1/2 cup of chives, chopped
  • 1 tsp. of Mexican spice mix
  • 4 Tortillas
  • Cheddar
  • Salt, to taste

METHOD:

  1. Put shredded chicken breast, tomato sauce, chives, and mexican spice mix in a bowl and mix together.
  2. Lay out the tortillas. Place a slice of cheddar in the center, and cover with the chicken mix.
  3. Fold up tortillas, and heat in a frying pan until golden.
  4. Enjoy!
