#7 - Taco Bell Grande Scrambler (Add Steak)

Taco Bell is a late bloomer in the fast food breakfast market, and while it's not the strongest contender, it seems more legit to want to go there for your breakfast burrito than anywhere else. While the breakfast crunchwrap sounds like a promising choice, it doesn't pack a real crunch the way the regular "Supreme" does. So we have to go with the Grande Scrambler, which is essentially a breakfast burrito stuffed with bacon, pico de gallo, sour cream, potatoes, shredded cheese, nacho cheese sauce and eggs. We like the fact that Taco Bell's signature flavors are there (pico de gallo, sour cream, nacho cheese), and they combine well with everyone's favorite breakfast foods. The only modification we'd make is to sub steak for the bacon bits, which don't have a very strong presence against the other ingredients.

These Cheesy Cauliflower Pizza Cups are just what you need when snack o'clock rolls around!

 

Ingredients

Makes 6

  • 1/2 cauliflower head
  • 8 eggs for cauliflower mix
  • Pepper
  • Salt
  • 4-6 cups shredded cheese
  • 6 slices salami
  • 6 tbsp pizza Sauce

 

Method

  1. Boil diced cauliflower in salted water until tender.
  2. Blend, then transfer to mixing bowl.
  3. Mix in 2 eggs, pepper and 2 cups of shredded cheese
  4. Share the cauliflower mixture out between 6 ramekins, forming little cups
  5. Add 1 cup of shredded cheese
  6. Bake for 25 min at 375°F
  7. Add a slice of salami, a tbsp of pizza sauce, and one raw egg to each ramekin
  8. Top with cheese and return to oven for 7 min at 375°F
  9. Serve, and enjoy!
