Japan's school lunch program is often touted as the ideal. Japanese schools don't have cafeterias. Instead, students eat at their desks—but don't expect to see any lunch ladies coming to the classroom! From a young age, students serve each other their lunches on a rotating schedule, giving them a stronger sense of community and connection to what they're eating. A typical lunch consists of rice, a protein (normally meat, tofu, or a mix of both), vegetables, soup, and milk.

These quick and easy chicken quesadillas are the perfect, last-minute family dinner!

INGREDIENTS:

  • 2 chicken breasts
  • 1/2 cup of tomato sauce
  • 1/2 cup of chives, chopped
  • 1 tsp. of Mexican spice mix
  • 4 Tortillas
  • Cheddar
  • Salt, to taste

METHOD:

  1. Put shredded chicken breast, tomato sauce, chives, and mexican spice mix in a bowl and mix together.
  2. Lay out the tortillas. Place a slice of cheddar in the center, and cover with the chicken mix.
  3. Fold up tortillas, and heat in a frying pan until golden.
  4. Enjoy!
