Step 7

Place the dough in a piping bag. Cover 2 baking sheets with parchment paper, then pipe out the cheese puffs—you're aiming for 4-cm diameter circles.

 

Note: If making ahead, cover loosely with plastic wrap and transfer the baking sheets to the freezer. Freeze until solid, then store in freezer bags for up to 2 months.

On the day you want to serve them, bake from frozen and add a few minutes onto the cooking time.

These quick and easy chicken quesadillas are the perfect, last-minute family dinner!

INGREDIENTS:

  • 2 chicken breasts
  • 1/2 cup of tomato sauce
  • 1/2 cup of chives, chopped
  • 1 tsp. of Mexican spice mix
  • 4 Tortillas
  • Cheddar
  • Salt, to taste

METHOD:

  1. Put shredded chicken breast, tomato sauce, chives, and mexican spice mix in a bowl and mix together.
  2. Lay out the tortillas. Place a slice of cheddar in the center, and cover with the chicken mix.
  3. Fold up tortillas, and heat in a frying pan until golden.
  4. Enjoy!
