Bolognese Sauce

We're about to burst your bubble: spaghetti bolognese is not an authentic Italian dish. Bolognese sauce is a tomato-y, meaty concoction that should always be made with ground beef (not chicken, turkey or meatballs), pancetta, onions, garlic, carrots, celery, red wine, olive oil, canned chopped tomatoes, bay leaves, salt and pepper. And it's not a bed of spaghetti but a bed of tagliatelle that it's meant to be served on. This is because the noodles have a wider, flat surface that absorbs the meat sauce better than thin spaghetti strands. Also remember: no butter or cream.
