Hailing from the region of Puebla, Mexico, cemita is a famous torta sandwich composed of meat, white cheese, onions, avocado and a special herb known as papalo, all served on a brioche-like sesame bread roll. This recipe stuffs it with cooked carnitas and adds chipotle chiles in adobo for a nice kick.
