Litti Chokha

For the Litti Dough::: In a large bowl, combine all dough ingredients and knead using warm water
- For Dough
- 1 Cup Wheat Flour
- 1 Tbsp Ghee (clarified butter)
- 1/2 tsp sugar
- Salt to taste
- Water for kneading
- For Stuffing
- 1/2 Cup Sattu Mix ( More about Sattu in footnotes)
- 1 tsp finely chopped ginger
- 1 tsp finely chopped garlic
- 1/2 tsp finely chopped green chilies
- 2 tsp finely chopped coriander
- 1 tbsp any pickle masala (spicy, sour and tangy taste)
- 1 tsp Good quality mustard oil
- 1 small onion finely chopped
- Salt to taste (about 1/2 tsp)
- Water for boiling
- For Chokha (Egg Plant mash)
- 1 Big Baingan (Brinjal or eggplant)
- 2 Tomatoes
- 1 tsp finely chopped green chilies
- 1 tsp minced garlic
- 2 tsp fresh green coriander chopped
- Salt to taste
- 2 tsp mustard oil
- 1 small onion finely chopped
Peas Kachori

Take all ingredients FOR PURI in a bowl
- FOR PURI--
- 3 Cups Maida
- 5 Tbsp Ghee or dalda
- 1/2 Tbsp Salt
- 1/2 Tsp Ajwain
- 1/2 Tsp Kalonji (Kala Jeera)
- Warm water for kneading the dough
- FOR FILLING--
- 500 gms Green Peas
- 1 1/2 tsp finely chopped ginger
- A pinch of Hing
- 2 Green chilies finely chopped
- 1 tsp Jeera
- Salt to taste
- Oil for deep frying + 4 tbsp for cooking the filling

Take Kadipatta, Ginger, Garlic and Saunf in a blender add a little water, just enough to blend smoothly
- 1 Cup Very Finely Chopped Cauliflower or grated
- 4 Medium Potatoes boiled and mashed
- 1 Green capsicum finely chopped
- 2 Onions Finely Chopped
- 1 Carrots finely chopped
- 4 Tomatoes finely chopped
- 4 Tbsp Vegetable Oil
- 1 Tbsp Finely chopped Ginger
- 2 Tbsp Finely Chopped Garlic
- 1 Tsp Jeera
- 1/2 Tsp Hing
- 1 Tsp Turmeric powder
- 2 Tsp Kadipatta
- 2 Tsp Saunf (not powdered)
- Salt to Taste
- 3-4 Tbsp Everest Pav Bhaji masala
- 4 Tbsp Amul Butter
- 1 Tsp Garam Masala
- 1 tsp Amul butter + pinch of chili powder for pav
- 2 Cups hot water (1 cup = 200ml)

- 1 cup yogurt try using whole milk yogurt
- 1tbsp chick pea flour or all purpose flour.
- 1tbsp paste of ginger and garlic (optional)
