Coat chicken in a small amount of flour; shake to remove excess

  • 4 boneless, skinless chicken breasts halves, slightly flattened

  • 3 Tbsp. butter
  • 3 Tbsp. water
  • 1 Tbsp. lemon juice
  • 1 ½ tsp. chicken bouillon mix

  • Coat chicken in a small amount of flour; shake to remove excess. Melt butter in a
  • non-stick frypan. Add chicken breasts and sauté each side until lightly browned. Add water, lemon juice and chicken bouillon mix to pan; stir until dissolved. Bring to a boil. Cover and simmer 5 to 7 min. Remove chicken from pan; keep warm. Cook and stir pan juices over high heat until thickened and syrupy, 1 or 2 min. Pour glaze over chicken, sprinkle with parsley and garnish with lemon slices. Makes 4 servings

Core cabbage and freeze overnight, before starting

  • Cabbage Rolls (Holubtsi)
  • My Mother's extra special, fine tuned over the years, family recipe from her mother, for holubtsi. :)
  • INGREDIENTS
  • 1 medium-sized head of cabbage
  • 3 medium onions, chopped
  • 2-3 tbsp butter
  • 1/2 lb Bacon
  • 2 cups long grain rice for one medium cabbage
  • 1-19 oz can tomato soup with can of water and 2 Tbsp butter
  • 4 tsp salt
  • ground pepper
  • - Core and freeze cabbage OVERNIGHT - it falls apart in water, no need to boil
  • - Fry onions in butter until they are transparent. Parboil the rice in a little water (just to cover the rice) and bring to a low simmer. Watch carefully - just until water is absorbed. The rice will still be a little 'hard'. It will soften up during baking.
  • - Add raw bacon and fried onions. Mix well. Season with salt and pepper to taste.
  • - Grease a roaster (a small covered enameled roaster works well, but a covered casserole dish should be just fine) with a little oil and cover the bottom and sides of the roaster with the outer cabbage leaves. Roll filling in an inner cabbage leaf to make a roll. Place rolls in roaster, fitting them snugly together with the seam on the bottom to prevent unrolling. Rolls can be placed in layers to fill the roaster. When the rolls are all in place, pour the tomato soup mix on top. Note: It is not necessary to use a whole can of tomato juice; it may boil over in the oven. A tray under the roaster to catch any overflow is a good idea. Cover all of the cabbage rolls with left over cabbage leaves. Cover the roaster, then bake in the oven at 400° F for 30 minutes, then 350° for 1 to 1-1/2 hours.

Wash and slice cucumbers and onion

  • 6 med. cucumbers
  • 1 lg. onion
  • 1 tbsp. salt
  • 1 c. vinegar
  • 1 2/3 c. sugar
  • 1 tbsp. celery seed
  • Wash and slice cucumbers and onion. Cover with water and sprinkle the salt over the top. Cover and let sit for 1 hour. Drain. Bring to boil vinegar, sugar and celery seed. Pack pickles and onion in jars or plastic containers and pour vinegar and sugar mixture over to cover. Cool and cover with lids and refrigerate. Will keep for months.

Place the chick peas in the food processor along with the garlic, lemon juice, and water

  • 2 c chick peas, canned, drained and rinsed
  • 3 cloves garlic, minced
  • 3 Tbsp lemon juice
  • ¼ c water
  • 3 Tbsp tahini (sesame paste)
  • ½ to 1 tsp cumin
  • ½ tsp paprika
  • Optional garnish: olive oil, parsley, lemon slices
  • Place the chick peas in the food processor along with the garlic, lemon juice, and water. Process for about a minute, until smooth. If too thick, add more water.
  • Stir in the tahini and spices, taste, and add more lemon juice/tahini/cumin/paprika as appropriate.
  • Spread the hummus into a shallow bowl, drizzle with olive oil, and garnish with lemon slices, minced parsley, and a drizzle of olive oil.
  • Serve chilled, with warm pita bread and/or fresh vegetables.

  • • 2 1/2 cups graham cracker crumbs
  • • 1/2 cup butter or margarine, melted
  • Filling
  • • 1/2 cup butter or margarine
  • • 1/2 cup icing sugar
  • • 2 eggs
  • Topping
  • • 1 cup whipping cream, fresh
  • • 1 teaspoon vanilla
  • • 1 tablespoon icing sugar
  • • 1(19ounce)can crushed pineapple, drained
  • Directions
  • 1. Crust: Mix graham crackers and butter together.
  • 2. Press into 9 x 13 inch pan.
  • 3. Bake in 250f degree oven for 15 minutes.
  • 4. Cool.
  • 5. Filling: In a bowl, cream together butter and icing sugar.
  • 6. Add eggs and beat well.
  • 7. Spread over cooled crust.
  • 8. Bake in 350f degree oven for 25 minutes.
  • 9. Cool.
  • 10. Topping: Beat together whipping cream, vanilla and icing sugar until stiff.
  • 11. Fold in pineapple.
  • 12. Spread over filling.
  • 13. Sprinkle extra graham wafer crumbs on top for a finishing touch.
  • 14. Chill.
  • 15. Cut into squares and serve.
