Thaw Cool Whip before starting recipe

  • Fruit Dip
  • 1 Tbsp. grated orange peel
  • 1 Tbsp. fresh lemon juice
  • ½ cup sugar
  • 1 well beaten egg
  • 1 (1 litre tub) Cool Whip – thawed
  • Put ingredients in a pot over low heat and cook until thickened (it burns easily). Then let cool. This can be done in the microwave, just be sure to mix occasionally (2 minutes at a time until thick)
  • Fold in Cool Whip by hand. Can be refrigerated for days and freezes well.

On stove top, melt butter, add brown sugar, egg and vanilla

  • 3 Tbsp. butter 1/3 cup raisins
  • 1 egg 1/3 cup currants
  • 1 cup brown sugar 1/3 cup walnuts
  • ½ tsp. salt ½ tsp. vanilla
  • Drop of milk
  • On stove top, melt butter, add brown sugar, egg and vanilla. Then add other ingredients.
  • ALWAYS DOUBLE RECIPE.
  • Use premade tart shells and bake as per directions. Fill tart shells 2/3 full…too much and they will flow over.

Cream shortening and sugar

  • Sugar Cookies
  • 2/3 cup shortening
  • ¾ cup sugar
  • ½ tsp. vanilla
  • 1 egg
  • 4 tsp. milk
  • 2 cup flour
  • 1 ½ tsp. baking powder
  • ¼ tsp. salt
  • If doubling, do two batches. Cream shortening and sugar. Add vanilla and egg. Then flour, baking powder and salt. Use milk to moisten the mixture. If to wet add flour until fairly stiff. Roll out on floured board and cut out shapes with cookie cutters. Bake at 375F, don’t let them brown.

In a deep mixing bowl combine flour, baking powder, sugar and salt

  • 4 cups All purpose flour
  • 4 tsp. baking powder
  • 1 cup sugar
  • ½ tsp. salt
  • ¾ cup shortening
  • 1 cup raisins
  • ½ cup candied chopped fruit (optional, just add more raisins)
  • 1 cup milk
  • In a deep mixing bowl combine flour, baking powder, sugar and salt. With a pastry blender, cut in the shortening. Stir in the raisins, chopped fruit. Blend in milk. Gather dough together and knead on a lightly floured board until smooth (2 to 3 min). Roll dough out to ½”, cut into circles. Bake 375F for 10 mins. or until slightly browned

Sift together cornstarch, icing sugar and flour

  • ½ cup corn starch
  • ½ cup icing sugar
  • 1 cup Flour
  • ¾ cup butter, softened
  • Sift together cornstarch, icing sugar and flour. With a large spoon, thoroughly blend in butter. Work with hands until soft, smooth dough forms. Shape into 1” balls or use cookie gun to make shaped cookies. Decorate with cherries, sprinkles or nuts.
  • Bake at 300F for 15 to 20mins. or until edges are lightly browned.

  • Banana Bread
  • ½ cup butter
  • 1 cup sugar
  • 2 eggs
  • 1 cup mashed bananas
  • 1 ½ cup flour
  • ½ tsp. salt
  • 1 tsp. baking soda
  • Cream together butter and sugar. Add in eggs. Then add bananas. Then add flour, salt and baking soda. Mix well and pour into lightly grease and flour loaf pan.
  • Bake at 350F for 1 hour or until toothpick comes out clean.

Preheat oven at 425F. Generously grease 12 muffin cups

  • Fast Cinnamon Buns
  • 2/3 cup butter, at room temperature
  • 1 cup lightly packed brown sugar
  • ½ tsp. cinnamon
  • 2 cups all purpose flour
  • 4 tsp. baking powder
  • 1 tsp. salt
  • ½ cup shortening
  • 1 cup milk
  • 1 cup chopped pecans (raisins)
  • Preheat oven at 425F. Generously grease 12 muffin cups. Stir butter, sugar and cinnamon together until mixed well. Set aside. Using a fork, stir flour, baking powder and salt in a large bowl until blended.
  • Cut in shortening with 2 knives until mixture resembles coarse meal. Stir in milk. Dough will be very soft. Gently knead 10 times.
  • Using a floured rolling pin, roll into a 9” square, about 1/3” thick. Spread on butter mixture, add nuts or raisins.
  • Roll up jelly style. Pinch seams together. Slice into 12 (3/4”) pinwheels. Place cut down, in muffin cups.
  • Bake in centre of preheated oven until cinnamon buns are golden, about 15-18 mins. Immediately remove buns from muffin cups. Makes 12

Brown hamburger and onion in an electric frying pan

  • Hamburger Rice
  • 1lb hamburger
  • 1 medium white onion chopped
  • 1 - 10oz can tomato soup
  • 1 - 28oz can diced tomatoes
  • 1 ½ cup Uncle Bens Instant Rice, uncooked
  • 1 – 10oz can water (use soup can)
  • Worcestershire sauce
  • Soy sauce
  • Brown hamburger and onion in an electric frying pan. Remove any fat after browning hamburger. Add tomatoes, soup, water, Worcestershire and soy sauce. Mix well, then add uncooked rice. Heat at 375F, mixing occasionally. Shimmer for 15 mins. or until rice is cooked.

Preheat oven at 375F. In a large heavy skillet, brown hamburger over medium heat

  • 1¼ lbs hamburger
  • 2 cloves garlic, peeled and minced
  • 4 tsp. ground basil
  • 1 tsp. salt
  • 1-16oz can diced tomatoes, including juice
  • 2-3oz cans tomato paste
  • 1 pkg lasagna noodles
  • 4 cups creamed cottage cheese, or combined with ricotta
  • 2 eggs, slightly beaten
  • 1 tsp. salt
  • ½ tsp. white pepper
  • ½ cup freshly grated parmesan cheese
  • 1 lb mozzarella cheese
  • Preheat oven at 375F.
  • In a large heavy skillet, brown hamburger over medium heat. Remove fat after browning. Add garlic, basil, salt, tomatoes and tomato paste. Combine and simmer for 15 mins., stirring occasionally.
  • In a large bowl combined cottage cheese/ricotta, eggs, salt, pepper and parmesan cheese.
  • Arrange in layers: Noodles, cheese, meat, mozzarella ……
  • OR mix cheese and meat mixture together….Noodles, mix, mozzarella …….
  • 13” x 9” X 1 3/4” pan. END WITH MEAT/CHEESE MIXTURE.
  • Bake at 375F for 25-30 mins.
  • Let stand 5 mins before cutting.

Black Bean Soup

In a large heavy saucepan, heat oil on medium heat

  • Black Bean Soup
  • 2 tsp. Vegetable oil
  • 2 cloves garlic minced
  • 1 each onion, carrot – peeled and chopped
  • 1 stalk celery, chopped
  • 1 bay leaf
  • 1 tsp. chili powder
  • ½ tsp. each thyme, oregano and ground cumin
  • ¼ tsp. salt and pepper
  • 3 cups chicken broth
  • 1 – 14oz can tomato sauce
  • 2 – 19oz cans Black beans; rinsed and drained
  • ¼ tsp. hot pepper sauce
  • 2 tsp. each lime juice and brown sugar
  • Sour cream and chopped parsley or corrainder
  • In a large heavy saucepan, heat oil on medium heat. Cook garlic, onion, carrot and celery for 5 mins. or until onion is softened. Stir in bay leaf, thyme, oregano, cumin, salt and pepper. Cook stirring for 30 seconds. Pour in chicken broth, tomato sauce; stir to combine. Bring to a boil; reduce heat to low and cook covered for 20 minutes or intil vegetables are tender.
  • Discard bay leaf. Stir in black beans, hot pepper sauce, lime juice and brown sugar into vegetable mixture. In a blender, puree in batches, until smooth. Return to saucepan and heat thoroughly. Ladle soup into warm bowls and garnish with a spoon of sour cream and parsley.
  • Makes 8 – 1 cup servings
