Panettone Bread Pudding

For the pudding: 1) Slice the panettone into 1-inch cubes to make about 7 cups
- Pudding:
- • 1 large stale panettone, plain or with fruits and nuts
- • 2 cups whole milk
- • 2 tablespoons brown sugar
- • 4 egg yolks
- • 1/2 vanilla bean, split lengthwise and seeds scraped
- Meringue:
- • 4 egg whites
- • 1/4 teaspoon cream of tartar
- • Unsalted butter, for the mold
- Creme Anglaise:
- • 1/4 cup brown sugar
- • 3 egg yolks
- • 1 cup 35-percent whipping cream
- • 1/2 vanilla bean
- • 1 cup blueberries
- • 1 cup strawberries

- 1 1/2 cups graham cracker crumbs
- 6 tablespoons butter, melted
- 1/4 cup granulated sugar
- 1/4 teaspoon ground cinnamon

- 1 package (8 ounces) cream cheese, softened
- 1/4 cup sugar
- 1 teaspoon vanilla

- Pumpkin layer
- 1 1/4 cups pumpkin puree, canned or fresh

- 1/2 teaspoon salt
- 1/4 teaspoon ground ginger
- 1 teaspoon ground cinnamon
- Dash of nutmeg
