Immerse egg noodles into boiling water for 30 seconds

- 1/2 teaspoon sesame oil
- Meat ingredients
- 1/2 lb chicken breast, sliced

- 6 -8 medium shrimp
- Vegetables
- 7 -8 baby bok choy
- broccoli
- 3/4 cup shiitake mushroom
- 1/2 cup baby corn
- Onions
- 3 tablespoons minced garlic
- 2 (250 g) packages fresh egg noodles
- All other ingredients
- 1/4 cup water
- 1 1/2 tablespoons cornstarch

Pad Thai

Place chopped chicken in a bowl and toss with soy sauce (1

- 10-12 medium raw shrimp, shells removed
- 1 boneless chicken breast or 1-2 thighs, chopped up into small pieces
- 1.5 Tbsp. soy sauce
- 3-4 cloves garlic, minced
- 1-2 fresh red or green chilies (to taste), finely sliced
- 1 tsp. grated galangal OR ginger
- 4 green onions, sliced (keep white separate from green)
- 1 egg
- 2-3 cups bean sprouts
- 1/3 cup dry roasted unsalted peanuts, chopped
- 2-3 Tbsp. vegetable oil for stir-frying
- lime wedges for serving
- PAD THAI SAUCE:
- 1/3 cup good-tasting chicken stock
- 3 Tbsp. rice vinegar OR white vinegar
- 1 Tbsp. lime juice
- 3-4 Tbsp. brown sugar
- 2 Tbsp. fish sauce
- 1 Tbsp. soy sauce
- 1/4 tsp. cayenne pepper
- 1/8 tsp. white pepper

Braised E-Fu Noodles with Mushroom

Heat the wok over high heat and add cooking oil
- 1 pack E-Fu noodle, poached
- 12 pcs straw mushrooms (canned or fresh), cut and poached
- 100g yellow chives, cut into 1 inch length
- 1 tsp dry sole fish powder its pee hu powder
- Seasoning:
- 1 tbsp cooking oil
- 400ml chicken consomme it is fined chicken stock
- 4 tsp oyster sauce
- 1/2 tsp sugar
- 1/4 tsp sesame oil
- 1 tsp Chinese wine (Hua Tiew Chiew)
- A dash of white pepper powder
- Dark soy sauce
Pho Noodle soup

Amazing dish
- BROTH
- 5 pounds beef marrow or knuckle bones
- 2 pounds beef chuck, cut into 2 pieces
- 2 (3-inch) pieces ginger, cut in half lengthwise and lightly bruised with the flat side of a knife, lightly charred (see Note, below)
- 2 yellow onions, peeled and charred (see Note, below)
- 1/4 cup fish sauce
- 3 ounces rock sugar, or 3 tablespoons sugar
- 10 whole star anise, lightly toasted in a dry pan
- 6 whole cloves, lightly toasted in a dry pan
- 1 tablespoon sea salt

- one eighth teaspoon ground ginger
- 2 tablespoons chopped fresh chives
- quarter teaspoon salt
- 1 half tablespoons cornstarch
- 4 eggs
- 1 egg yolk
Creme Corn Soup

Bring the broth or stock to a boil in a saucepan over medium heat
- 5 cups homemade chicken stock or storebought chicken broth
- 1 1/4 cups canned creamed corn
- 1/4 teaspoon salt, to taste
- 1/2 teaspoon granulated sugar
- Black or white pepper, to taste
- 2 teaspoons Chinese rice wine or dry sherry
- 3/4 cup cooked crabmeat, or cooked diced ham
- 1 tablespoon cornstarch dissolved in 2 tablespoons water
- 2 egg whites, lightly beaten
- 1/2 teaspoon Asian sesame oil, or to taste
- 2 green onions (spring onions), finely chopped for garnish, optional
