Crawfish Pasta

Replica of Crawfish Monica served at Jazz Fest in New Orleans
- 1 lb. crawfish tails, boiled and peeled; OR
- 1 lb. shrimp, peeled; OR
- 1 lb. lump crabmeat; OR
- 1 lb. oysters, drained and quartered.
- 1 stick of butter (Do not use margarine.)
- 1 pint of half-and-half
- 1 good-sized bunch green onions, chopped (tops, too)
- 3 - 10 cloves garlic, chopped (to your taste)
- Creole seasoning to taste (or 1 - 2 tbsp.)
- 1 lb. cooked fresh pasta (Dry pasta is all right if fresh is not available. Rotini is preferred, but use your favorite shape.)

- 3 cups red potatoes, peeled, boiled and cut into cubes ( about 1 pound )
- 4 tablespoons butter or margarine
- 4 tablespoons flour
- 2 cups milk
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1/2 lb Velveeta cheese- cut into chunks
- 1/2 cup sharp cheddar cheese, shredded
- 1 lb skinless smoked sausage – I used natural casing hotdogs
- 1/4 teaspoon paprika
Creamy Tomato Tortellini Soup

- 2 whole large Cloves Of Garlic Minced
- 2 Tbl Olive Oil
- 2 10¾ oz Cans of Condensed Tomato Soup
- ¼ cup Sun Dried Tomatoes, chopped or 2 Tbl Of Sun Dried Tomato Paste
- 2 cups Half-and-half
- 2 cups Chicken Stock
- 1 tsp Onion Powder
- 1 Tbl Italian Seasoning
- ½ tsp Salt
- ½ tsp Pepper
- 1 whole 9 Oz Package Of Cheese Filled Tortellini
- ½ cup Shredded Parmesan Cheese, for garnish
Homemade Marinara Sauce

- 1 tablespoon olive oil
- 8 garlic cloves, thinly sliced
- 4 fresh basil leaves, torn into small pieces
- Two 28-ounce cans crushed tomatoes, with their juices
- 2 teaspoons Kosher salt
- 2 teaspoons balsamic vinegar
Homemade Spaghetti Meat Sauce

Old fashioned spaghetti meat sauce
- 1 lb. 80/20 ground beef OR 90/10 ground beef
- 1 6 oz. can tomato paste
- 6 oz. water
- 1 24 oz. jar tomato puree
- 5-6 cloves garlic, minced
- 2 tbsp. granulated sugar
- Pinch of dried oregano
- Pinch of onion powder
- Pinch of garlic powder
- Handful of fresh basil, chopped
- Salt and pepper, to taste

- Fries:
- 4-6 Potatoes
- 1/4 cup olive oil
- Sea Salt, Fresh ground pepper, your favorite seasoning salt
- Sour Cream/Ranch Sauce:
- 1 cup sour cream
- 1/2 cup ranch dressing
- 1/4 cup milk
- Toppings:
- 1 cup (or as much as you like) Shredded cheddar cheese
- 1/2 cup shredded mozzarella cheese
- 1/2 cup real bacon bits
- 1/4 cup green onions

- 8 cups chicken broth (or 8 cups water and 4 Tbsp chicken bouillion granules)

- 1 (8-oz) bag extra broad egg noodles
- 2 Tbsp chopped parsley
- ½ tsp fresh ground black pepper

- 1 (14.5-oz) can fire roasted diced tomatoes with garlic
- 1 (8-oz) can tomato sauce
- ½ (6-oz) can tomato paste
- 1 Tbsp dried Italian seasoning
- 16 oz whole milk ricotta cheese
- 4 oz fresh grated parmesan cheese
- 1 tsp salt
- 1 tsp black pepper
- 1 lb dried pasta (ziti or penne are best)
- 3 cups water
- 1 (8-oz) package shredded Italian cheese blend
