Peanut Butter Pie with Pretzel Crust

Spray a 9-inch pie pan with cooking spray or lightly grease with butter
- Crust:
- 1 c. + 2 T finely ground salted pretzel crumbs
- 7 T melted butter
- 3 T sugar
- Filling:
- 1 ½ c. packed light brown sugar
- 6 T flour
- 1 ½ c. milk
- 2 egg yolks, slightly beaten
- 4 T peanut butter
- ½ tsp. vanilla
Red Beans and Rice

Heat a drizzle of oil in a large saucepan set over medium heat
- canola or olive oil, for cooking
- 1 onion, peeled and chopped
- 1 lb (454 g) fully cooked sausage, such as kielbasa, sliced (optional)
- 2 celery stalks, chopped
- 1 red or yellow pepper, seeded and chopped
- 3-4 garlic cloves, crushed or chopped
- 4 cups (1 L) cooked red kidney beans, or 2 19 oz (540 mL) cans, drained
- 4-5 plum tomatoes, chopped, or 1 14 oz (398 mL) can diced or stewed tomatoes
- 1-2 tsp. (5-10 mL) Cajun or Creole seasoning
- steamed rice, for serving

- 8 ounces fettuccine or your favourite pasta
- 1 tablespoon butter
- 1 pound shrimp, peeled and deveined
- 1 tablespoon cajun seasoning
- 2 cloves garlic, chopped
- 1/4 cup dry white wine or chicken broth
- 1 cup heavy/whipping cream
- 1 cup parmigiano reggiano (parmesan), grated
- 1/2 tablespoon cajun seasoning or to taste - link this
- 1/4 cup green onion, sliced
Print Baked Southwestern Eggrolls

In a large bowl, combine everything but the egg roll wrappers
- 2 cups frozen corn, thawed
- 1 can (15 OUNCES) black beans, rinsed and drained
- 1 package (10 ounces) frozen chopped spinach, thawed and squeezed dried
- 1 1/2 cup shredded Mexican cheese blend
- 1 can (4 ounces) chopped green chilies, drained
- 4 green onions, chopped
- 1/4 cup chopped cilantro
- 1 teaspoon ground cumin
- 1/2 teaspoon chili powder
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 1/4 teaspoon cayenne red pepper
- 1 package (21) egg roll wrappers
- **1 egg beaten for sealing egg roll (can substitute water)
Smothered Chicken

Preheat oven to 350 degrees
- INGREDIENTS:
- 12 oz boneless skinless chicken breast - grilled (I used tenders)
- 1 teaspoon olive oil
- 1 green bell pepper - sliced
- 8oz mushrooms - sliced
- 1 large onion - cut in half and sliced
- 1 clove garlic - minced
- 1 teaspoon oregano
- salt and pepper - to taste
- 1 tablespoon dijon mustard
- 1/2 cup reduced fat mozzarella cheese
Oven Tacos

Preheat the oven to 400 degrees
- 2 lbs ground beef (or turkey/chicken)
- 1 small onion diced
- 1 small can diced green chilies
- 1 recipe for Homemade taco seasoning (below)
- 1 (8 ounce) can low sodium tomato sauce
- 1 (16 ounce) can fat free refried beans
- 2 cups shredded reduced fat Colby-jack cheese
- 18-20 hard taco shells
- Optional Condiments-
- Lettuce (shredded)
- Tomato (diced)
- Salsa
- Guacamole
- Sour Cream
- Olives, sliced
- Taco Seasoning
- 1 tablespoon chili powder
- 1/4 teaspoon garlic powder
- 1/4 teaspoon onion powder
- 1/4 teaspoon crushed red pepper flakes
- 1/4 teaspoon dried oregano
- 1/2 teaspoon paprika
- 1 1/2 teaspoons ground cumin
- 1 teaspoon sea salt
- 1 teaspoon black pepper
- In a small bowl, mix all together. Store in an airtight container.
Cajun Chicken Pasta Dinner

Prep all your vegetables. In a small blender make a slurry by combining milk, flour and cream cheese
- 8 ounces uncooked linguine (I used Dreamfields)
- 1 pound chicken breast strips
- 1-2 tsp Cajun seasoning (or to taste)
- 1 tbsp olive oil
- 1 medium red bell pepper, thinly sliced
- 1 medium yellow bell pepper, thinly sliced
- 8 oz fresh mushrooms, sliced
- 1/2 red onion, sliced
- 3 cloves garlic, minced
- 2 medium tomatoes, diced
- 1 cup fat free low sodium chicken broth
- 1/3 cup skim milk
- 1 tbsp flour
- 3 tbsp light cream cheese
- fresh cracked pepper
- 2 scallions, chopped
- salt to taste

Chicken Enchilada Casserole

1.In a large bowl, mix together shredded chicken, green onions, salsa, 1/2 cup cheese, and corn; set aside
- 3 cups shredded cooked chicken breast
- 4 green onions, thinly sliced
- 1/2 cup green salsa (salsa verde)
- 1/2 cup shredded Mexican blend cheese
- 1/2 cup frozen whole kernel corn
- 1 10 ounce can mild enchilada sauce
- 6 6 inches corn tortillas, each torn into quarters
- 6 - 8 tablespoons shredded Mexican blend cheese
