preheat oven to 350F. grease and flour a 12in bunt pan
- 1 pkg chocolate cake mix
- 1 pkg chocolate instant pudding
- 1 cup milk
- 1/2 cup sour cream
- 4 large eggs
- 1 cup chopped nuts
- 2 cups chocolate chips
- 1 bar unsweetened baking chocolate
- 1 1/2 cups sifted powdered sugar
- 3 T butter
- 2 to 3 T water
- 1 tsp vanilla
Homemade fondant

melt marshmallows and 2 T water in a large pot over medium heat stirring constantly
- 16 oz mini marshmallows
- 2 to 5 T water
- 2 lbs powdered sugar
- 1/2 cup vegetable shortening
Chocolate Mousse

melt the chocolate over hot water
- 1 lb dark chocolate
- 9 oz butter
- 5 oz egg yolks
- 12 oz egg whites
- 2.5 oz sugar
Chocolate Cake with Peanut Butter frosting

Preheat the oven to 350F. Grease a 13x9 baking pan
- FOR THE CAKE
- 3/4 cup granulated sugar
- 3/4 cup brown sugar
- 2 cups all purpose flour
- 2/3 cup cocoa powder
- 1 1/2 tsp baking powder
- 1 1/2 tsp baking soda
- 1 tsp salt
- 2 eggs
- 1 cup butter milk
- 1/2 cup vegetable oil
- 2 tsp vanilla extract
- 1 cup boiling water
- FOR THE FROSTING
- 5 T butter softened
- 1 1/2 cup powdered sugar
- 1 tsp vanilla extract
- 1 cup smooth peanut butter
- 2 T low fat milk
Fajita Marinade

- 1/2 cup soy sauce
- 2 T lime juice
- 1 T minced garlic
- 2 T Dijon mustard
- 1/2 tsp oregano

- 1 1/2 cup milk
- 1/4 cup white vinegar
- 2 cup flour
- 1/4 cup sugar

Shrimp and Corn Chowder

In a soup pot sweat the bacon, garlic, and shallots on the vegetable oil
- 3 T vegetable oil
- 2 T minced bacon
- 1 T minced garlic
- 1 T minced shallot
- 1 cup white wine
- 2 1bs small shrimp(uncooked and peeled)
- 1 cup kernel corn
- 1 cup cream corn
- 1 qt heavy cream
- 1 qt milk
- 2 qt chicken or crab stock
- 1 tsp dried thyme
- 1 tsp vanilla extract
- 1 T hot sauce
- 1 T Worcestershire sauce
- 2 bay leaves
- 2 cups blonde roux (1 cup flour 3/4 cup vegetable oil)
Chicken Fettuccini Alfreado

in a large skillet over medium heat, combine chicken, 2 T butter, 2 cloves garlic and Italian seasoning
- 6 skinless boneless chicken breasts cut into cubes
- 6 T butter divided
- 4 cloves garlic minced and divided
- 1 T Italian seasoning
- 1 lb fettuccini pasta
- 1 onion diced
- 1/3 cup all purpose flour
- 1 T salt
- 3/4 tsp ground white pepper
- 3 cups milk
- 1 cup half and half
- 3/4 cup grated parmesan cheese
- 8 oz shredded Colby jack cheese
- 3 roma tomatoes diced
- 1/2 cup sour cream
Citrus Carrots

Peel and chop carrots. In a large pot, combine all ingredients except for parsley
- 1 lb carrots
- juice of 1 orange
- 2 tsp butter
- 1 tsp sugar
- 2 tsp parsley
