Bourbon Chicken and Rice

THE NIGHT BEFORE: Combine the soy sauce, oil, vinegar, bourbon, and brown sugar in a bowl
- 1½ lbs. chicken thighs (I used boneless skinless – delish!)
- ½ cup low sodium soy sauce
- ¼ cup oil
- ¼ cup vinegar
- ¼ cup bourbon
- ¼ cup brown sugar
- 1 tablespoon crushed or sliced ginger (fresh, not dried)
- 4 cloves crushed garlic
- 4-5 green onions, cut into thirds or sliced
- 1 cup uncooked basmati rice
Chocolate Jack Daniels Cupcakes

Chocolate J.D. Cupcakes Preheat oven to 350 degrees F
- Chocolate J.D. Cupcakes
- 2 Cups (10 ounces) all purpose flour
- 3/4 cup (3.75 ounces) coco powder
- 2 cups (14.5 ounces) granulated sugar
- 2 tsp. baking soda
- 1 tsp. baking powder
- 1 tsp. kosher salt
- 2 eggs
- 1/2 cup super strong coffee
- 1/2 cup Jack Daniels Whiskey
- 1 cup buttermilk
- 1/2 cup vegetable oil
- Dark Chocolate Whiskey Ganache
- 16 ounces good quality dark chocolate 65-72 %, chopped into small pieces 1/4 inch or less.
- 3/4 cup heavy cream
- 2 Tbsp. unsalted butter, softened
- 1/4 cup Jack Daniels Whiskey
- Dark Chocolate Whiskey Buttercream
- 1 lb. unsalted butter, softened
- 1- 3 ounce package white chocolate, vanilla or cheesecake instant pudding mix
- 2 cups Dark Chocolate Whiskey ganache
- 1/2 cup sifted dark cocoa powder
- 1/2 cup heavy cream
- 1/2 cup powdered sugar
- more whiskey to taste
Tea Bag Biscuits

Beat the butter and sugar together in the bowl of an electric mixer until light and fluffy
- 85 g/3ozs butter, softened
- 140g/5ozs white caster superfine sugar
- 1 egg
- 1 teaspoon vanilla
- 180g plain flour
- 100g dark chocolate
Tempura Buffalo Wings

2. Preheat the oven to 300 degrees and line a rimmed baking sheet with paper towels
- 3 pounds chicken wings, joints separated, tips discarded
- 2 quarts vegetable oil
- 1/2 teaspoon salt
- 1/2 cup rice flour
- 1/2 cup water
- 4 tablespoons butter, melted
- 1/2 cup hot sauce
- Celery sticks and blue cheese dressing, for serving
Carrabba’s Bread Dipping Spice

- 1 Tbsp Minced Basil 1 tsp dried
- 1 Tbsp Chopped Parsley (Italian is best) 1 tsp dried
- 1 Tbsp Minced Garlic
- 1 tsp Dried Thyme
- 1 tsp Dried Oregano
- 1 tsp Dried Rosemary
- 1 tsp Ground Black Pepper
- 1/2 tsp Kosher Salt
- 1/4 tsp Crushed Red Pepper Flakes
- 1/2 tsp Olive Oil
- 1/8 tsp Lemon Juice
Hard Dough Bread

1. Dissolve the yeast in some of the liquid and add 1 teaspoon sugar
- 1 1/2 lbs strong
- plain flour
- 1/2 oz. fresh yeast or
- 1 rounded tsp. dried yeast
- 2 tsp. salt
- 1 tsp. sugar
- 1/2 pint warm water
- (Commercial hard dough bread recipe includes 30 grams (2 tbsps. shortening and the same amount of egg white (optional)
- Set oven at 230°C or 450°F. It takes 40 minutes for the loaf to bake. All ingredients and utensils should be warmed to assist the fermentation.
Sweet Plantains

- 1/2 tsp cayenne pepper or 1/4 tsp hot pepper sauce
- 4 tbsp mayonnaise
- 1/4 tsp black pepper
- pinch garlic powder
- pinch seasoned salt
- chopped scallions
- chopped wiri wiri pepper or scotch bonnet (both are optional)
