Black Cake

Preheat oven to 275 degrees
- For the Fruits you will need:
- 3/4 lb raisins
- 3/4 lb currants
- 3/4 lb prunes
- 1/4 lb candied cherries
- 1/4 lb mix citrus peel
- 1/4 lb almond or peanuts (optional)
- rum or port wine
- Wash and grind all ingredients. This can done with a food mill or food processor. Mix in about 2 cups of rum or port wine and allow to sit for at least 2 weeks. Store in an airtight container.
- 1 lb or 3 1/2 cups all purpose flour
- 1 lb or 4 sticks unsalted butter
- 1 lb of fruit mixture
- 2 cups brown sugar
- 10 eggs
- *caramel or cake coloring
- 1 tsp baking powder
- 1 tsp cinnamon
- 1 tsp nutmeg
- 1 tsp mace
- 1 tsp ground cloves
- 1/2 tsp vanilla essence
- 1/2 tsp almond essence
- 1 bottle of Dark Rum
Chow Mein

Cook chowmein according to directions on package
- 1 12oz package of Chowmein
- 2 boneless, skinless chicken breast
- 1/2 large onion, chopped
- 2 cloves garlic, sliced thinly
- 2 scallion/green onion, finely chopped
- 2 tbsp vegetable oil
- 1 tbsp sesame oil
- 1/2 tsp grated ginger
- 1/2 tsp five spice powder
- 1/2 tsp red pepper flakes
- 3 tbsp light soy sauce
- 3 tbsp hoisin sauce
- 1 lb frozen stir fry vegetable mix, thawed
Beef Patty

On a medium fire heat 2 tsp of canola oil
- 1 lb ground beef
- 2 garlic cloves, finely chopped
- 1 small onion, chopped
- 2 scallion, chopped
- 1 tsp black pepper
- 5 sprig thyme
- salt to taste

Curry Fried Chicken

Mix all ingredients for the spice mix in a small bowl and set aside
- 10 pieces of chicken- I used legs and thighs
- 4 cups water + 3 cups cold water
- 1/3 cup sugar
- 3 tbsp salt
- 1/8 tsp red pepper flakes
- 8 cloves garlic, smashed
- About 15 sprigs thyme
- ½ cup coconut milk
- 2 cups flour
- 3 eggs
- ¾ cup milk
- Canola oil
- 2 tbsp spice mix*
- ****Spice Mix****
- 1 tbsp curry powder
- ½ tsp salt
- 1 tsp powdered chicken bouillon
- 1 tsp garlic powder
- ½ tsp paprika
- 1 tsp dried parsley
- ¼ tsp cumin
Vegetable Fried Rice

Place wok over high fire and add sesame and canola oil
- 6 cups cold rice
- 1 cup shredded carrots
- 1 cup frozen peas
- 1 tbsp crushed garlic
- 1 tsp crushed ginger
- 2 tbsp soy sauce
- ½ tsp sesame oil
- 2 tbsp canola oil
- ½ tsp 5 spice
- ¼ tsp red pepper flakes
- 1 tsp salt
- Scallion to garnish

Sift the flour, baking power and salt together into a deep bowl and add the lard
- 2 cups flour
- 2 tsp double-acting baking powder
- 1 tsp salt
- 2 tsp lard, chilled and cut into ¼ inch bits
- 2 tsp sugar dissolved in ¼ cup of cold water
- Vegetable oil for frying
Butter Flaps

Dissolve yeast in warm milk (1 cup boiling and 1 cup cold) together with sugar
- 3 x 8 gram packets of yeast
- 2 cups milk
- 5 cups flour
- 3 tbs sugar
- 4 oz margarine
- 1 tsp salt
- 2 eggs
- 4 oz margarine (for basting)
Cheese Rolls

Grate the cheese, then mix the cumin seeds and pepper powder with the cheese
- 11 oz white flour
- 9 oz cheese
- 2 tsp pepper powder (or you can substitute 2 tsp pepper saucce and some mustard) to taste
- 5½ oz margarine or lard
- Cumin powder for flavor
- 1/3 cup ice water
- 1 egg, beaten

- 6 oz butter
- 8 oz flour
- 8 oz (2 cups) grated cheese
- ½ tsp salt
- ½ tsp pepper, optional
- 1 tsp. mustard
- 2 eggs, separate yolks from white

Clean the meat thoroughly
- 2 lbs stewing steak (pork or beef) or brisket
- 2 pig trotters or cow's heels (optional: it will make it gooey)
- 2 lbs ox tail
- 1 cup cassareep
- 2 red hot pepper
- 1 in x 1 in stick cinnamon
- 3 heads clove
- 2 oz. sugar
- Salt to taste
- 2 stalks basil
- 1 bunch fine thyme
- 1 large chopped onion
- 3 cloves chopped garlic
